Coconut crusted quiche

Ingredients
  

  • For the crust
  • 1 cup coconut flour
  • salt
  • pepper
  • 1 tbs coconut oil
  • 6 eggs
  • For the filling
  • 4 eggs
  • 1/2 cup milk/coconut milk
  • 1 cup cooked and drained spinach
  • 1/2 cup feta
  • Salt and pepper to taste

Method
 

  1. For the crust
  2. Preheat the oven to 160 degrees C. Mix together the flour with the seasoning. Combine the dry mixture with the coconut oil (I use my fingers, you can use a mixer). Add the eggs one at a time until combined. Press into a baking tin and put in the oven until almost golden. Remove from the oven and bring the temperature up to 180 degrees
  3. For the filling
  4. Whisk together the eggs and milk. Put in the spinach and feta and mix well. Taste and season liberally. Pour into crust and place into the oven until set.
