Quinoa stuffed pepper

Ingredients
  

  • 1/4 cup quinoa
  • 1 cup vegetable stock
  • 1 tbs miso paste
  • 1 small onion
  • 2 cloves garlic
  • 1 tbs coconut oil
  • salt and pepper to taste
  • 1 bell pepper

Method
 

  1. Cook the quinoa in the vegetable stock until the stock has disappeared and the quinoa is soft
  2. Take off the heat and add the miso
  3. In the meantime fry the onions and garlic in the coconut oil.
  4. Add the aromatics to the quinoa and season to taste.
  5. Stuff into the pepper just before serving.
