Spicy vegetable soup with dumplings

Ingredients
  

  • 2 cups broth
  • 1 parsnip peeled and sliced into ribbons
  • 1 carrot peeled and sliced into medalions
  • 1 cup green beans topped and tailed and cut in half
  • 1/2 a leek sliced into thin ribbons
  • 1 tin sweet corn
  • 2 dried chillis
  • water to cover
  • salt and pepper to taste
  • 6-7 dumplings
  • 1 tbs soy sauce

Method
 

  1. Put all the ingredients except the dumplings and soy sauce into a large pot.
  2. Bring the pot to the boil on a high heat and once it's bubbling drop to a low medium heat to continue simmering. The longer it simmers the better.
  3. Put the dumplings in according to the cooking time instructed on the packaging.
  4. Before serving, add soy sauce and taste to make sure the seasoning is right.
