Veg loaded spagbol – a simple recipe

Ingredients
  

  • 1/2 a large onion diced
  • 1 tbs olive oil
  • 2 cups Country harvest veg cauliflower, broccoli, carrots, green beans
  • 500 g lean mince
  • 500 g Ostrich mince
  • 1 sachet tomato paste
  • 1 tbs crush garlic
  • 1 tin italian style tomatoes or plain tinned tomatoes and add basil and origano
  • 1 1/2 tins water
  • 2 tsp Paprika I used hungarian
  • salt and pepper to taste
  • Hard cheese to sprinkle

Method
 

  1. On a medium-high heat fry the onion until translucent
  2. Add the veggies and cook until soft
  3. Add the mince a little at a time and brown
  4. Add garlic and tomato paste and cook out the tomato paste for about 1 minute
  5. Add the tinned tomatoes and water and stir well
  6. Add the paprika, salt and pepper.
  7. Bring the heat down and allow to simmer for as long as possible (the longer the simmer the deeper the flavour)
  8. Serve with your choice of sauce soaker and sprinkle with a strong hard cheese:)
